Organic Cultured Ghee

Cultured Ghee is a traditional form of ghee, prepared from cultured organic butter. During the culturing process, the milk solids contained within the butter change just like when milk is cultured into yogurt. The sugar in the milk solids in the form of lactose is converted to lactic acid. The cultured butter is then slowly cooked until all water is removed and remaining cultured milk solids are lightly toasted, and the oil within the butter—the ghee—is poured off and strained. The fermentation process used to prepare cultured ghee adds a slightly sour taste, which increases its healing power. It becomes more easily digestible, especially for people who are lactose intolerant.
